Method

Base Preparation

  1. 1

    Prepare the Base

In a large pot, melt the butter over medium heat. Once melted, add the flour and whisk for about 1-2 minutes to create a roux.

  2. 2

    Add Stock and Tomato Puree

Slowly pour in the beef stock while whisking continuously to prevent lumps. Then, add the tomato puree, salt, black pepper, Worcestershire sauce, and Tabasco sauce.

  3. 3

    Simmer

Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 30 minutes, stirring occasionally.

Thickening the Soup

  1. 4

    Prepare the Thickening Agent

In a separate bowl, whisk together the egg yolks and heavy cream until well combined.

  2. 5

    Temper the Egg Mixture

Gradually add a ladle of the hot soup base into the egg yolk mixture while whisking constantly to temper the eggs. This prevents them from curdling.

  3. 6

    Combine

Slowly pour the tempered egg mixture back into the pot while stirring. Continue to cook over low heat for an additional 5-10 minutes, ensuring it doesn't boil.

Serving

  1. 7

    Garnish

Ladle the soup into bowls and garnish with freshly chopped parsley and a lemon wedge on the side.

  2. 8

    Serve

Serve hot and enjoy your delicious Bookbinder!
