Blackberry Cordial Preparation

    Make the Blackberry Cordial

    In a medium saucepan, combine the blackberries, sugar, and water. Bring to a gentle boil over medium heat, stirring occasionally until the sugar has dissolved and the blackberries have released their juices, about 10 minutes.

    Strain the Cordial

    Remove the saucepan from heat and let it cool for a few minutes. Strain the mixture through a fine-mesh sieve into a clean container to remove the solids, pressing down on the berries to extract as much liquid as possible. Discard the solids and let the cordial cool to room temperature. This can be made ahead of time and stored in the refrigerator.

Smash Preparation

    Muddle the Ingredients

    In a glass or cocktail shaker, add the fresh mint leaves and lemon juice. Use a muddler or the back of a spoon to gently crush the mint leaves to release their oils, about 15-20 seconds.

    Add Blackberry Cordial

    Pour in the prepared blackberry cordial (about 4 oz) and mix gently with the muddled mint and lemon juice.

    Add Ginger Beer

    Top off the mixture with ginger beer, filling the glass to your desired level. Stir gently to combine all the ingredients.

    Garnish and Serve

    Garnish with additional mint leaves and a few whole blackberries if desired. Serve immediately over ice.
