Prepare the Biscuit Dough
Preheat the oven to 425°F (220°C). In a large bowl, whisk together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.

Add Buttermilk
Make a well in the center of the mixture and pour in the buttermilk. Stir until just combined, being careful not to overmix.

Shape the Biscuits
Turn the dough out onto a floured surface and gently pat it into a 1-inch thick rectangle. Cut out biscuits using a round cutter and place them on a baking sheet.

Bake the Biscuits
Bake the biscuits in the preheated oven for 12-15 minutes or until golden brown.
Sausage Gravy

Cook the Sausage
In a large skillet over medium heat, crumble and cook the sausage until browned and cooked through, about 5-7 minutes.

Make the Roux
Sprinkle the flour over the cooked sausage and stir well to combine. Cook for about 1-2 minutes to eliminate the raw flour taste.

Add Milk
Gradually whisk in the milk and bring the mixture to a simmer. Cook until the gravy thickens, about 5 minutes.

Season the Gravy
Add black pepper, salt, and red pepper flakes to taste. Stir well.
