Beignet Preparation

    Prepare the Dough

    In a small bowl, combine warm water (about 110°F) and yeast. Let it sit for about 5 minutes until it becomes frothy. In a large mixing bowl, combine flour, granulated sugar, and salt. Add the yeast mixture, milk, eggs, and vanilla extract. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape the Beignets

    Once the dough has risen, punch it down and roll it out to about 1/4 inch thickness. Cut into squares (about 2 inches).

    Heat the Oil

    In a deep skillet or fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Beignets

    Carefully drop the squares of dough into the hot oil, a few at a time. Fry for about 2-3 minutes on each side until golden brown. Remove and drain on paper towels.
