Prepare the Grits

In a medium saucepan, bring 4 cups of water to a boil. Stir in the grits and salt. Reduce heat to low and simmer for about 20-25 minutes, stirring occasionally, until the grits are thick and creamy. Stir in the grated Parmesan cheese and set aside.

Cook the Spinach

In a skillet over medium heat, heat 1 tablespoon of olive oil. Add the minced garlic and sauté for about 1 minute until fragrant. Add the spinach and cook until wilted, about 3-4 minutes. Season with salt and pepper. Remove from heat and set aside.

Prepare the Salmon

In a small bowl, mix together the lemon juice, chopped dill, remaining olive oil, salt, and pepper. Brush this mixture over the salmon fillets.

Grill the Salmon

Preheat the grill to medium-high heat. Place the salmon fillets on the grill, skin-side down. Grill for about 6-8 minutes per side, or until the salmon is cooked through and flakes easily with a fork.

Assemble the Dish

On each plate, spoon a generous portion of the Parmesan garlic grits, top with a serving of wilted spinach, and place a grilled salmon fillet on top. Drizzle with any remaining lemon dill mixture if desired.
