Prepare the beans

Rinse the dried red beans under cold water. Soak them overnight in a large bowl covered with water.

Cook the sausage

In a large pot, slice the andouille sausage into rounds and cook over medium heat until browned. Remove and set aside.

Sauté the vegetables

In the same pot, add the chopped onion, green bell pepper, and celery. Sauté for about 5 minutes until softened. Add minced garlic and cook for an additional minute.

Combine ingredients

Add the soaked beans, bay leaves, thyme, cayenne, black pepper, salt, and chicken broth to the pot. Stir to combine.

Simmer

Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the beans are tender.

Add sausage

Once the beans are tender, return the cooked sausage to the pot. Simmer for an additional 15 minutes.

Serve

Remove bay leaves. Serve the red beans over cooked white rice and garnish with sliced green onions.
