Prepare the Shrimp or Oysters

In a mixing bowl, combine flour, cornmeal, salt, black pepper, and cayenne pepper. In another bowl, whisk together the egg and milk. Dip shrimp or oysters into the egg mixture, then dredge in the flour mixture.

Fry the Seafood

Heat oil in a deep skillet over medium-high heat. Once hot, carefully add the shrimp or oysters in batches and fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Assemble the Po Boy

Slice the French bread lengthwise but do not cut all the way through. Spread a generous amount of creole mayo inside. Layer with lettuce, tomato slices, pickles, and the fried shrimp or oysters.

Serve

Serve immediately, optionally smothered with gumbo for an extra kick.
