    Cook the Sausage

    In a skillet over medium heat, cook the Andouille sausage until browned and cooked through, about 8-10 minutes. Remove from skillet and let rest.

    Sauté Vegetables

    In the same skillet, add sliced onion and bell pepper. Sauté until softened and caramelized, about 5-7 minutes.

    Prepare the Bread

    Slice the French bread lengthwise, leaving one side attached. Lightly toast in the oven if desired.

    Assemble the Po Boy

    Spread a generous amount of Creole mayo on both sides of the bread. Layer the cooked sausage, sautéed onions and peppers, provolone cheese, lettuce, sliced tomato, and pickles inside the bread.

    Serve

    Close the sandwich and slice it in half. Serve immediately with extra pickles on the side.
