Prepare the Roast
Preheat your oven to 350°F (175°C). Rub the beef roast with olive oil, salt, black pepper, garlic powder, and onion powder. Place in a roasting pan.

Roast the Beef
Roast in the oven for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare. Let it rest for 15-20 minutes before slicing.

Make the Creole Mayo
In a bowl, mix the mayonnaise with the Creole mustard until well combined. Adjust seasoning to taste.

Prepare the Vegetables
Slice the tomato and prepare the lettuce and pickles.

Assemble the Po Boy
Slice the French bread lengthwise. Layer the sliced beef, provolone cheese, lettuce, tomato, and pickles. Spread a generous amount of Creole mayo on the inside of the bread.

Serve
Cut the sandwiches in half and serve immediately while hot.
