Prepare the Rice
In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of white rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 18-20 minutes or until rice is tender and water is absorbed. Remove from heat and let sit covered for 5 minutes.

Cook the Sausage
In a large skillet, heat the olive oil over medium heat. Add the Andouille sausage, sliced into rounds, and cook until browned, about 5-7 minutes. Remove from skillet and set aside.

Make the Gravy
Add the cooked sausage back to the skillet along with the kidney beans, chicken broth, Cajun seasoning, bay leaf, salt, and black pepper. Stir well and bring to a simmer. Reduce heat to low and let it simmer for about 20 minutes, stirring occasionally.

Serve
Remove the bay leaf from the skillet. Serve the kidney bean gravy over the cooked white rice. Garnish with chopped fresh parsley if desired.
