Preheat the oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, 0.5 cups sugar, and melted butter until well mixed. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes and then remove from the oven to cool.

In a large bowl, beat the softened cream cheese until smooth. Gradually add 1 cup of sugar and continue to beat until well combined. Add sour cream and vanilla extract, mixing until smooth. Add eggs one at a time, mixing on low speed until just combined.

Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.

Bake the cheesecake in the preheated oven for about 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour.

In a saucepan over medium heat, combine 1 cup of brown sugar, 0.5 cup of heavy cream, and 0.25 cup of unsalted butter. Stir until the mixture comes to a boil. Continue to boil for 5 minutes without stirring. Remove from heat and stir in 1 cup of chopped pecans.
