Prepare the Filling
In a bowl, combine the creamed spinach, chopped artichoke hearts, and provolone cheese. Season with salt and black pepper to taste. Set aside.

Make the Omelette
In a mixing bowl, beat the eggs until well combined. Heat a non-stick skillet over medium heat and add a bit of butter or oil. Pour in the eggs and cook until the edges start to set.

Add the Filling
Once the omelette is partially cooked, spoon the prepared filling onto one half of the omelette. Allow it to cook for a couple of minutes until the eggs are fully set.

Fold and Serve
Carefully fold the omelette in half over the filling. Slide it onto a plate and serve immediately with hollandaise sauce and wheat toast on the side.
