    Prepare the Seafood

    In a bowl, combine the flour, cornmeal, salt, and black pepper. In another bowl, whisk together the egg and milk. Dip the shrimp or oysters into the egg mixture, then coat with the flour mixture.

    Fry the Seafood

    Heat oil in a deep pan over medium-high heat. Fry the shrimp or oysters in batches for 3-4 minutes or until golden brown and cooked through. Remove and drain on paper towels.

    Assemble the Po Boy

    Slice the French bread lengthwise, but don't cut all the way through. Spread Creole mayo on both sides of the bread. Layer with lettuce, sliced tomato, pickles, and then add the fried shrimp or oysters.

    Serve

    Close the sandwich and cut it in half. Serve immediately with extra Creole mayo on the side.
