    Slice the green tomatoes into 1/4 inch thick slices. Set up a breading station with three bowls: one with flour mixed with salt and pepper, one with beaten eggs, and one with cornmeal.

    Dip each tomato slice first in the flour mixture, then in the egg, and finally in the cornmeal, ensuring they are fully coated.

    Fry the Tomatoes

    Heat oil in a large skillet over medium heat. Once hot, carefully add the breaded tomato slices and fry until golden brown on both sides, about 3-4 minutes per side. Remove and place on paper towels to drain excess oil.

    Slice the fresh-baked bread in half horizontally. Layer the provolone cheese, fried green tomatoes, and olive giardiniera on the bottom half of the bread. Place the top half on and press down gently.
