Soak the Chicken
In a bowl, soak chicken tenders in buttermilk for at least 1 hour, preferably overnight for best results.

Prepare the Coating
In a separate bowl, mix flour, cornstarch, salt, black pepper, and paprika.

Fry the Chicken
Heat vegetable oil in a deep skillet over medium-high heat. Remove chicken from buttermilk, dredge in flour mixture, and fry until golden brown and cooked through, about 5-7 minutes per side. Drain on paper towels.

Cook the Bacon
In a separate pan, cook black pepper bacon until crispy. Drain on paper towels.

Make the Hollandaise Sauce
In a heatproof bowl, whisk together egg yolks, lemon juice, and a pinch of cayenne pepper. Place over a pot of simmering water and whisk until thickened. Gradually whisk in melted butter until smooth and creamy.
