Prepare the Fish
Rinse the catfish fillets under cold water and pat them dry with paper towels.

Season the Catfish
In a shallow bowl, mix the buttermilk with salt, black pepper, and cayenne pepper. Soak the catfish fillets in the buttermilk mixture for about 30 minutes.

Coat the Catfish
Remove the catfish from the buttermilk and let the excess drip off. Dredge each fillet in the cornmeal mixture, ensuring an even coating.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot (around 350°F or 175°C).

Fry the Catfish
Carefully place the coated catfish fillets in the hot oil. Fry for about 4-5 minutes per side or until golden brown and crispy.

Drain and Serve
Remove the fried catfish from the skillet and drain on paper towels. Serve hot with your choice of dipping sauce.
