    Prepare the Roux

    In a large pot, melt the butter over medium heat. Gradually whisk in the flour and cook, stirring constantly, until the roux turns a light brown color (about 15-20 minutes).

    Add the Vegetables

    Stir in the onion, celery, green bell pepper, and garlic. Cook for about 5 minutes until the vegetables are soft.

    Season the Mixture

    Add the cayenne pepper, cajun seasoning, salt, and black pepper. Mix well.

    Add Crawfish and Broth

    Pour in the chicken broth and add the crawfish tails and bay leaves. Bring to a simmer and cook for about 15 minutes.

    Finish and Serve

    Remove bay leaves, then stir in chopped green onions. Serve over cooked white rice.
