Prepare the Catfish
In a shallow bowl, combine the flour, cornmeal, and Cajun seasoning. In another bowl, whisk together the eggs and buttermilk.

Bread the Catfish
Dip each catfish fillet into the buttermilk mixture, then dredge in the flour-cornmeal mixture, ensuring an even coating.

Fry the Catfish
Heat the vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the breaded catfish fillets and fry until golden brown and cooked through, about 3-4 minutes per side. Drain on paper towels.

Assemble the Po Boy
Slice the French bread or hoagie rolls in half. Spread a generous amount of remoulade sauce on the inside of each roll. Place a fried catfish fillet in each roll.

Top each sandwich with coleslaw mix, pickled onions, and pickles.

Close the sandwiches and serve immediately while hot.
