    Prepare the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Stir in 1 cup of grits and add 1 tsp of salt. Reduce heat to low and simmer, stirring occasionally, until thickened, about 20-25 minutes. Once done, stir in 2 tablespoons of butter and set aside.

    Prepare the Catfish

    In a shallow dish, combine the cornmeal, flour, black pepper, and half of the benne seeds. In another bowl, beat the eggs with the milk. Dip each catfish fillet first in the egg mixture, then dredge it in the cornmeal mixture, ensuring it's well-coated.

    Fry the Catfish

    In a large skillet, heat the oil over medium-high heat. Once hot, carefully add the catfish fillets. Fry for 4-5 minutes on each side or until golden brown and cooked through. Remove and place on a paper towel-lined plate to drain excess oil.

    Prepare the Eggs

    In a separate pan, heat a little butter over medium heat. Crack the remaining eggs into the pan and cook to your preference (sunny-side up, over-easy, etc.).

    Serve

    On each plate, serve a portion of grits topped with a fried catfish fillet and a cooked egg. Sprinkle the remaining benne seeds on top for added flavor and crunch.
