    Prepare the base

    In a large pot, heat the olive oil over medium heat. Add the diced onion, bell pepper, and celery (the 'holy trinity' of Cajun cooking) and sauté until softened, about 5 minutes.

    Add sausage and chicken

    Stir in the Andouille sausage and chicken thighs. Cook until the chicken is browned, about 5-7 minutes.

    Incorporate spices

    Add the minced garlic, Cajun seasoning, bay leaves, salt, and black pepper. Stir well and cook for another 2 minutes.

    Add liquids and simmer

    Pour in the chicken broth and canned diced tomatoes. Bring to a boil, then reduce heat to low and let simmer for 30 minutes.

    Add shrimp and okra

    Add the shrimp and okra to the pot. Cook for an additional 5-10 minutes until the shrimp are cooked through.
