    Prepare the Cream Mixture

    In a medium saucepan, heat the heavy cream, granulated sugar, vanilla extract, and cinnamon over medium heat until just simmering. Stir frequently to dissolve the sugar.

    Whisk Egg Yolks

    In a separate bowl, whisk together the egg yolks until smooth. Gradually pour the hot cream mixture into the egg yolks, whisking constantly to temper the eggs.

    Bake the Custard

    Strain the custard mixture through a fine mesh sieve into a measuring cup or bowl. Pour the mixture into ramekins and place them in a baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins.

    Bake

    Bake in a preheated oven at 325°F (163°C) for 30-35 minutes or until the custards are set but still slightly jiggly in the center.

    Cool and Refrigerate

    Remove the ramekins from the water bath and let them cool to room temperature. Cover with plastic wrap and refrigerate for at least 2 hours or until completely chilled.

    Caramelize the Sugar

    Before serving, sprinkle a thin layer of cinnamon sugar on top of each custard. Use a kitchen torch to caramelize the sugar until bubbly and golden brown. If you don’t have a torch, you can place them under a broiler for a few minutes, watching closely.
