Braised Beef

    Prepare the Beef

    Season the beef chuck roast with smoked paprika, cumin, garlic powder, salt, and black pepper. Heat olive oil in a large Dutch oven over medium-high heat, then sear the beef on all sides until browned.

    Sauté Aromatics

    Remove the beef and add chopped onion to the pot. Sauté until translucent, about 5 minutes. Stir in the chipotle peppers and cook for an additional minute.

    Braised Cooking

    Return the beef to the pot, add beef broth and bay leaves. Bring to a simmer, then cover and transfer to a preheated oven at 300°F (150°C). Braise for 3-4 hours until tender.

Elote Rice

    Combine Ingredients

    In a large bowl, combine the cooked rice, corn kernels, mayonnaise, crumbled Cotija cheese, chili powder, and lime juice. Mix well and set aside.

Garlic Sautéed Spinach

    Sauté Spinach

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds. Add spinach and cook until wilted, about 3-5 minutes. Season with salt and black pepper to taste.

Carrot Chipotle Sauce

    Make the Sauce

    In a saucepan, heat olive oil over medium heat. Add chopped carrots and sauté for about 5 minutes. Add chipotle peppers and vegetable broth, bring to a boil, then simmer until the carrots are tender. Blend until smooth and season with salt to taste.
