Preparing the Pork Belly

    Season the Pork Belly

    In a small bowl, combine smoked paprika, brown sugar, garlic powder, onion powder, salt, and black pepper. Rub this mixture all over the pork belly.

    Smoke the Pork Belly

    Preheat your smoker to 225°F (107°C). Place the seasoned pork belly in the smoker and smoke for about 3 hours, or until it reaches an internal temperature of 190°F (88°C).

Making the BBQ Sauce

    Combine Sauce Ingredients

    In a saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, salt, and pepper. Simmer over low heat for about 15 minutes, stirring occasionally.

Making Southern Fried Rice

    Cook the Eggs

    In a large skillet or wok, heat vegetable oil over medium heat. Scramble the eggs and cook until set. Remove and set aside.

    Stir-Fry the Vegetables

    In the same pan, add diced bell pepper and green onions. Stir-fry for 2-3 minutes until slightly tender.

    Combine Ingredients

    Add the cooked rice, soy sauce, and scrambled eggs. Stir-fry everything together for about 5-7 minutes until heated through. Season with salt and pepper to taste.

Serving

    Plate the Dish

    Slice the smoked pork belly and serve it over a generous portion of southern fried rice. Drizzle with BBQ sauce and enjoy!
