    Prepare Salmon Cakes

    1. In a large bowl, flake the cooked salmon into small pieces. Add breadcrumbs, beaten egg, chopped green onions, Dijon mustard, lemon juice, salt, and black pepper. Mix until well combined. Form the mixture into patties.

    Cook Salmon Cakes

    2. Heat olive oil in a skillet over medium heat. Add the salmon patties and cook for about 4-5 minutes on each side until golden brown and cooked through.

    Make Blackened Peach Sauce

    3. In a pan, add the peeled and diced peaches, brown sugar, balsamic vinegar, cayenne pepper, and a pinch of salt. Cook over medium heat until the peaches are softened and caramelized, about 5-7 minutes.

    Prepare Goat Cheese Polenta

    4. In a saucepan, bring water to a boil. Gradually whisk in the polenta and cook for about 20-25 minutes, stirring frequently. Once thickened, stir in goat cheese, butter, and salt until smooth.
