Caramelize the Onions
In a skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add sliced onions, sprinkle with salt, and cook, stirring occasionally, for about 15-20 minutes, until they are golden brown and soft.

Prepare the Au Jus
In a saucepan, bring beef broth to a simmer over medium heat. Add salt and black pepper to taste. Keep warm.

Assemble the Sandwich
Slice the French bread in half lengthwise. Layer the bottom half with the sliced prime rib, caramelized onions, and Swiss cheese. Place the top half of the bread on.

Grill the Sandwich
In the same skillet used for the onions, melt the remaining tablespoon of butter. Grill the sandwich on medium heat for about 4-5 minutes on each side, or until the bread is golden brown and the cheese is melted.

Cut the sandwich into halves or quarters and serve hot with a side of warm au jus for dipping.
