Prepare the Potato Chips
Wash and slice potatoes thinly (about 1/8 inch thick). Rinse in cold water to remove excess starch, then dry thoroughly.

Fry the Chips
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato slices in batches until golden brown, about 3-4 minutes. Remove and drain on paper towels. Season with salt and pepper to taste.

Prepare the Wings
Preheat oven to 400°F (200°C). Place chicken wings in a large bowl. For buffalo wings, toss with hot sauce. For chipotle BBQ wings, toss with chipotle BBQ sauce. For jerk wings, sprinkle with jerk seasoning and rub to coat evenly.

Bake the Wings
Place wings on a baking sheet lined with parchment paper. Bake in the preheated oven for 40-45 minutes, turning halfway through, until crispy and cooked through.

Serve
Serve the wings hot with house-made potato chips and ranch dressing on the side for dipping.
