    Prepare the Vegetables

    Dice the potatoes, red bell pepper, zucchini, and onion into small cubes. Chop the spinach.

    Cook the Proteins (Optional)

    If adding bacon, breakfast sausage, hot link sausage, or shaved prime rib, cook them in a large skillet over medium heat until fully cooked. Remove from the skillet and set aside.

Cooking

    Sauté the Vegetables

    In the same skillet, add olive oil. Once hot, add the diced potatoes and cook for about 5 minutes until they begin to soften. Add the onion, red bell pepper, and zucchini. Cook for an additional 5-7 minutes.

    Add Spinach and Cheese

    Stir in the chopped spinach, aged Swiss, and Parmesan cheese. Cook until spinach wilts and cheese melts.

    Cook the Eggs

    In a separate pan, fry the eggs over medium heat until the whites are set but the yolks are still runny.

    Combine and Serve

    Plate the vegetable hash and top with the fried eggs. Add the cooked proteins on the side or on top if desired. Season with salt and black pepper to taste.
