    Prepare the Vegetables

    Chop the onion, poblano pepper, and bell pepper into small pieces.

    Cook Home Fries

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the home fries and cook until golden brown and crispy, about 10-15 minutes. Season with salt and black pepper.

    Sauté Vegetables

    In a separate skillet, heat the remaining tablespoon of olive oil. Add the chopped onion, poblano, and bell pepper. Sauté until softened, about 5-7 minutes.

    Add Spinach and Pastrami

    Add the spinach and pastrami to the skillet with the sautéed vegetables. Cook until the spinach wilts and the pastrami is heated through, about 3-4 minutes.

    Cook Eggs

    In another skillet, cook the eggs over medium heat to your desired doneness (about 4-5 minutes for over medium).

    Assemble the Dish

    Place the cooked home fries on a plate, top with the vegetable and pastrami mixture, and finally add the cooked eggs on top.
