Beef Tenderloin Kabobs

    Prepare the Marinade

    In a bowl, combine olive oil, minced garlic, lemon juice, salt, and black pepper. Mix well.

    Marinate the Beef

    Cut the beef tenderloin into 1-inch cubes and add to the marinade. Let it marinate for at least 30 minutes.

    Prepare the Vegetables

    Cut bell peppers and red onion into similar-sized pieces.

    Assemble the Kabobs

    Thread the marinated beef, bell peppers, and onion onto the skewers, alternating between meat and vegetables.

    Grill the Kabobs

    Preheat the grill to medium-high heat. Grill the kabobs for about 10-12 minutes, turning occasionally, until the beef is cooked to your desired doneness.

Lemon Rice

    Cook the Rice

    In a saucepan, bring water to a boil. Add the rice, lemon zest, lemon juice, and salt. Reduce heat, cover, and simmer for 15-20 minutes until the rice is tender.

    Remove from heat, stir in butter, and let it sit covered for 5 minutes before fluffing with a fork.

Tzatziki Sauce

    Grate the cucumber and squeeze out excess moisture. In a bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt. Mix well and refrigerate until serving.

Toasted Pita

    Brush pita bread with olive oil and toast on a skillet or in the oven until golden brown.
