Make the Cheese Filling
In a mixing bowl, combine shredded cheese, cream cheese, cilantro, and salt. Mix well until creamy and set aside.

Prepare the Dough
Using store-bought empanada dough or homemade dough, roll out the dough to about 1/8-inch thickness. Cut into 4-5 inch circles.

Fill the Empanadas
Place a spoonful of the cheese filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for better sealing.

Cook the Empanadas
Heat oil in a frying pan over medium heat. Fry the empanadas for about 3-4 minutes on each side, or until golden brown and crispy. Drain on paper towels.

Serve
Serve the empanadas warm. Enjoy with your favorite dipping sauce!
