Dough Preparation

    Make the Dough

    In a large bowl, mix the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the egg yolk and cold water until the dough comes together. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Filling Preparation

    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add the onion, garlic, and green bell pepper, and sauté until softened. Add the ground beef, cumin, paprika, salt, and black pepper. Cook until the beef is browned. Remove from heat, stir in the hard-boiled eggs and olives. Let cool.

    Assemble Empanadas

    Preheat the oven to 400°F (200°C). Roll out the dough on a floured surface to about 1/8 inch thickness. Cut out circles using a cookie cutter or a glass. Place a tablespoon of filling in the center of each circle. Fold the dough over to form a half-moon shape and crimp the edges to seal. Place on a baking sheet.

    Bake the Empanadas

    Brush the tops of the empanadas with beaten egg. Bake in the preheated oven for 20-25 minutes, or until golden brown.
