Prepare the French Fries
Cook the French fries according to package instructions until crispy and golden brown. Set aside.

Slice the Prime Rib
Thinly slice the prime rib against the grain into bite-sized pieces.

Assemble the Sandwich
On a sturdy bread (like a hoagie or baguette), spread mayonnaise on one side. Layer the sliced prime rib on top of the mayo and add provolone cheese slices.

Melt the Cheese
Place the assembled sandwich under a broiler until the cheese is melted and bubbly, about 2-3 minutes.

Prepare the Au Jus
While the sandwich is broiling, heat the au jus in a small saucepan over medium heat.

In a small bowl, mix the creamy horseradish with salt and pepper to taste.
