    Sauté the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 30-40 minutes.

    Add Garlic and Broth

    Stir in the minced garlic and cook for about 1 minute. Then, add the white wine, scraping any browned bits from the bottom of the pot. Allow the wine to reduce for about 5 minutes.

    Simmer the Soup

    Add the beef broth, thyme, bay leaf, salt, and black pepper. Bring to a simmer and let cook for about 20 minutes to allow the flavors to meld.

    Prepare the Bread

    While the soup is simmering, preheat your oven to 350°F (175°C). Place the baguette slices on a baking sheet and toast in the oven for about 10 minutes, until crisp.

    Assemble and Broil

    Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, top each with a slice of toasted baguette, and sprinkle generously with Gruyère and Parmesan cheese. Place under the broiler for 3-5 minutes, or until the cheese is bubbly and golden.
