Gelato Preparation

    Prepare the Base

    In a medium saucepan, combine the whole milk, heavy cream, and sugar. Heat over medium heat until the sugar is dissolved and the mixture is warm, but not boiling.

    Whisk Egg Yolks

    In a separate bowl, whisk together the egg yolks until smooth. Gradually add a small amount of the warm milk mixture to the egg yolks, whisking constantly to temper the yolks.

    Combine Mixtures

    Slowly pour the tempered egg yolk mixture back into the saucepan, stirring constantly. Cook over medium-low heat until the mixture thickens slightly and coats the back of a spoon, about 5-7 minutes.

    Add Flavoring

    Remove from heat and stir in the vanilla extract and your chosen seasonal flavoring. If using fruit, blend it into a puree before adding.

    Chill the Mixture

    Transfer the mixture to a bowl, cover with plastic wrap, and refrigerate for at least 4 hours or overnight until completely chilled.

    Churn the Gelato

    Once chilled, churn the mixture in an ice cream maker according to the manufacturer’s instructions until it reaches a soft-serve consistency.

    Freeze and Serve

    Transfer the gelato to an airtight container and freeze for at least 2 hours to firm up. Scoop and serve in bowls or cones.
