Prepare the Filling
In a large skillet, heat a tablespoon of vegetable oil over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Then, add ground chicken or mixed vegetables, carrots, cabbage, and green onions. Stir-fry for about 5-7 minutes until cooked through. Add soy sauce, sesame oil, salt, and pepper. Mix well and cook for another 2 minutes. Remove from heat and let cool.
Assemble the Spring Rolls
Place a spring roll wrapper on a clean surface with a corner pointing towards you. Spoon about 2 tablespoons of the filling onto the wrapper. Fold the bottom corner over the filling, then fold the sides in, and roll tightly away from you. Seal the edge with a little water. Repeat with remaining wrappers and filling.
Fry the Spring Rolls
In a deep frying pan or wok, heat vegetable oil over medium-high heat. Once hot, carefully add the spring rolls in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes or until golden brown and crispy. Remove and drain on paper towels.
Serve
Serve the fried spring rolls hot with a dipping sauce of your choice.
