Marinate the Meat

Cut the chicken or beef into bite-sized pieces and place them in a bowl. In a separate bowl, mix together the soy sauce, lime juice, honey, minced garlic, grated ginger, red chili flakes, salt, and black pepper. Pour the marinade over the meat, cover, and let it marinate in the refrigerator for at least 30 minutes.

Prepare the Peanut Sauce

In a small saucepan over medium heat, combine the peanut butter, a little water to thin it out if necessary, and any leftover marinade. Stir until smooth and warm. Adjust seasoning with salt and more chili flakes if desired. Remove from heat and set aside.

Skewer the Meat

After marinating, thread the pieces of chicken or beef onto the skewers. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.

Grill the Skewers

Preheat a grill or grill pan over medium-high heat. Grill the skewers for about 10-12 minutes, turning occasionally, until the meat is cooked through and has nice grill marks.

Serve

Remove the skewers from the grill and serve hot with the warm peanut sauce drizzled over the top or as a dipping sauce on the side.
