Fried Tiger Shrimp Rolls

Prep the Shrimp
In a bowl, season the tiger shrimp with salt and black pepper. Let it marinate for 15 minutes.

Assemble the Rolls
Soak one rice paper wrapper in warm water for about 10-15 seconds until softened. Lay it flat on a clean surface. Place 2-3 shrimp, a few julienned carrots, cucumbers, and cilantro leaves on the lower third of the wrapper. Fold the sides over the filling and roll it up tightly. Repeat with the remaining ingredients.

Prepare the Coating
In a shallow bowl, beat the egg. In another shallow bowl, place the cornstarch.

Coat the Rolls
Dip each roll in the egg mixture, then coat it in cornstarch, ensuring it is fully covered.

Fry the Rolls
In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, fry the rolls in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve the fried tiger shrimp rolls hot with a side of plum sauce for dipping.
