Prepare the Pork
In a small bowl, mix together brown sugar, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Rub the mixture all over the pork shoulder.

Cook the Pork
Place the pork shoulder in a slow cooker. Pour apple cider vinegar over the pork. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix in the BBQ sauce. Let it cook for an additional 30 minutes on low.

Prepare the Rolls
While the pork is finishing, toast the split top rolls until golden brown.

Assemble the Sandwiches
Spoon a generous amount of pulled pork onto each toasted split top roll. Top with shredded cheddar cheese, spicy pickles, and crispy onions.
