For the Smoked Baby Back Ribs

Preparation and Cooking

Prepare the Ribs
Remove the membrane from the back of the ribs and pat them dry with a paper towel.

Make the Dry Rub
In a bowl, mix together brown sugar, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.

Season the Ribs
Rub the dry rub mixture all over the ribs, coating them evenly. Wrap in plastic wrap and refrigerate for at least 2 hours or overnight.

Prepare the Smoker
Preheat your smoker to 225°F (107°C) and add your choice of wood chips for smoking.

Smoke the Ribs
Place the ribs in the smoker and smoke for about 4-5 hours, or until the internal temperature reaches 190-203°F (88-95°C).

Baste with Barbecue Sauce
In the last 30 minutes of cooking, baste the ribs with barbecue sauce to caramelize.

Rest and Serve
Remove the ribs from the smoker, let them rest for 10-15 minutes, then slice and serve with your choice of two sides.
