Prepare the Batter
In a large bowl, whisk together the beer, flour, cornstarch, baking powder, salt, and black pepper until smooth.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter and Fry the Fish
Dip each haddock fillet into the batter, allowing excess to drip off. Carefully place the fillet into the hot oil and fry for 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Warm the Tortillas
While the fish is frying, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side.

Assemble the Tacos
On each warm tortilla, add a piece of fried haddock, a handful of shredded lettuce, a spoonful of fresh salsa, and a drizzle of chipotle ranch dressing. Fold the tortilla and serve immediately.
