    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and cook until they are tender and start to brown, about 10-15 minutes. Stir occasionally to prevent sticking.

    In another skillet, heat the remaining tablespoon of olive oil over medium-low heat. Add the sliced onions and cook slowly, stirring occasionally, until they are caramelized, about 15 minutes. Remove from heat and set aside.

    Once the potatoes are cooked, add the chopped corned beef to the skillet with the potatoes. Stir in the caramelized onions, salt, and black pepper. Cook for an additional 5-7 minutes, allowing the flavors to meld together.

    In a separate non-stick skillet, fry the eggs to your desired doneness (sunny-side up, over easy, etc.).
