Prepare the Potatoes
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and cook until they are tender and start to brown, about 10-15 minutes. Stir occasionally to prevent sticking.

Caramelize the Onions
In another skillet, heat the remaining tablespoon of olive oil over medium-low heat. Add the sliced onions and cook slowly, stirring occasionally, until they are caramelized, about 15 minutes. Remove from heat and set aside.

Fry the Eggs
In a separate non-stick skillet, fry the eggs to your desired doneness (sunny-side up, over easy, etc.).

Serve
Serve the corned beef hash hot, topped with a fried egg and drizzled with maple syrup.
