    Braised Corned Beef

    In a large pot, heat a bit of olive oil over medium heat. Add the corned beef and sear on all sides until browned. Pour in the Guinness and bring to a simmer. Cover and braise on low heat for about 3 hours, or until the meat is fork-tender.

    Prepare Lager Braised Sauerkraut

    In a separate pan, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Stir in the sauerkraut, lager, and caraway seeds. Simmer for about 30 minutes, stirring occasionally.

    Assemble the Reuben

    Once the corned beef is ready, slice it thinly against the grain. On a slice of marble rye, layer the corned beef, a generous amount of lager braised sauerkraut, a slice of Swiss cheese, and another slice of rye on top. Spread Thousand Island dressing on the inside of the top slice before closing.

    Grill the Sandwich

    Preheat a skillet or griddle over medium heat. Add butter to the skillet. Grill the assembled sandwiches on both sides until golden brown and the cheese is melted, about 3-4 minutes per side.
