Soup Ingredients

Method

Soup Preparation

  1. 1

    Sauté the Onions

In a large pot, heat the olive oil over medium heat. Add the sliced onions and sauté for about 20-25 minutes, stirring frequently, until the onions are caramelized and golden brown.

  2. 2

    Add Garlic and Broth

Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant. Then add the beef broth, ale, bay leaves, thyme, salt, and pepper. Bring the mixture to a simmer.

  3. 3

    Simmer the Soup

Reduce the heat to low and let the soup simmer for about 30-40 minutes, allowing the flavors to meld. Remove bay leaves before serving.

  4. 4

    Prepare Croutons and Cheese

While the soup is simmering, preheat your oven to 375°F (190°C). Cut the baguette into slices and arrange them on a baking sheet. Top each slice with provolone, Swiss, and Parmesan cheese. Bake for about 10 minutes or until the cheese is bubbly and golden.

  5. 5

    Serve the Soup

Ladle the soup into bowls, top each with a cheesy baguette crouton, and garnish with crisp onion straws. Serve immediately.
