Add Garlic and Broth
Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant. Then add the beef broth, ale, bay leaves, thyme, salt, and pepper. Bring the mixture to a simmer.

Reduce the heat to low and let the soup simmer for about 30-40 minutes, allowing the flavors to meld. Remove bay leaves before serving.

While the soup is simmering, preheat your oven to 375°F (190°C). Cut the baguette into slices and arrange them on a baking sheet. Top each slice with provolone, Swiss, and Parmesan cheese. Bake for about 10 minutes or until the cheese is bubbly and golden.
