Prepare the Shrimp
In a bowl, soak the peeled and deveined shrimp in buttermilk for at least 30 minutes.

Make the Breading
In a shallow dish, mix the flour, cornmeal, Cajun seasoning, salt, and black pepper.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until hot.

Fry the Shrimp
Remove shrimp from the buttermilk and dredge them in the flour mixture. Fry the shrimp in batches until golden brown and cooked through, about 2-3 minutes per side. Drain on paper towels.

Assemble the Po' Boys
Slice the French bread or hoagie rolls lengthwise. Spread mayonnaise on the inside, then add shredded lettuce, sliced tomatoes, and the fried shrimp. Drizzle with hot sauce to taste.

Serve the shrimp po' boys warm, with extra hot sauce on the side if desired.
