Sauté the Vegetables

In a large pot, melt the butter over medium heat. Add the onion, carrot, and celery. Sauté until the vegetables are soft, about 5-7 minutes.

Add Garlic and Tomato Paste

Stir in the minced garlic and tomato paste. Cook for an additional 2 minutes until fragrant.

Deglaze with Wine

Pour in the dry white wine, scraping up any browned bits from the bottom of the pot. Allow the wine to simmer for about 3-5 minutes.

Add Stock and Lobster

Add the lobster stock or seafood broth and the cooked lobster meat. Bring the mixture to a simmer and cook for 10 minutes.

Blend the Bisque

Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer it to a blender in batches.

Stir in Cream and Season

Return the blended bisque to the pot (if using a blender). Stir in the heavy cream, salt, and black pepper. Heat through but do not boil.

Serve

Ladle the bisque into bowls and garnish with fresh parsley before serving.
