Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips or desired fry shape.

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a deep fryer or a large heavy pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain and pat the soaked potatoes dry. Carefully add a handful of fries to the hot oil, frying in batches to avoid overcrowding. Fry for about 5-7 minutes until golden brown and crispy.

Remove the fries from the oil and drain on paper towels. While they are still hot, season with salt, black pepper, and garlic powder to taste.
