Prepare the Coating
In a shallow dish, combine the cornmeal, flour, cajun seasoning, salt, and black pepper. Mix well.

Dredge the Fish
Dip each flounder fillet in buttermilk, allowing excess to drip off. Then, dredge the fillet in the cornmeal mixture, coating well.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot.

Fry the Flounder
Carefully place the coated flounder fillets in the hot oil. Fry for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
Slice the French bread rolls in half. Spread mayonnaise on both sides of the rolls. Add a generous amount of shredded lettuce and sliced tomatoes. Place the fried flounder on top.
