1. Prepare the Chicken
In a bowl, combine buttermilk, garlic powder, onion powder, salt, and black pepper. Add the chicken breasts and marinate for at least 1 hour in the refrigerator.
2. Prepare the Coating
In a separate bowl, mix together flour, cornmeal, paprika, salt, and black pepper.
3. Fry the Chicken
Heat vegetable oil in a deep pan over medium-high heat. Remove the chicken from the buttermilk marinade, allowing excess to drip off. Dredge the chicken in the flour mixture, making sure to coat evenly. Fry the chicken in the hot oil until golden brown and cooked through, about 5-7 minutes per side. Remove and drain on paper towels.
4. Assemble the Sandwich
Spread mayonnaise on the inside of each piece of French bread. Layer with shredded lettuce, sliced tomatoes, and fried chicken. Drizzle with hot sauce to taste. Close the sandwich and serve immediately.
