    Prepare the Catfish

    Rinse the catfish fillets under cold water and pat dry with paper towels.

    Make the Breading

    In a shallow dish, combine the flour, cornmeal, Cajun seasoning, salt, and black pepper. In another bowl, whisk together the eggs and milk.

    Coat the Fillets

    Dip each catfish fillet first in the egg mixture, allowing any excess to drip off, then dredge in the flour-cornmeal mixture until well coated.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

    Fry the Catfish

    Carefully place the coated fillets in the hot oil, cooking for about 4-5 minutes on each side or until golden brown and cooked through.

    Drain and Serve

    Remove the catfish from the skillet and drain on paper towels. Serve hot with lemon wedges and tartar sauce.
