Preparation Steps

    Prepare the Potatoes

    Wash and peel the potatoes. Cut them into small cubes.

    Roast the Potatoes

    In a large skillet, melt 2 tablespoons of butter over medium heat. Add the cubed potatoes and season with salt and black pepper. Cook for about 15-20 minutes or until golden brown and crispy, stirring occasionally.

    Add Roasted Red Peppers

    Once the potatoes are cooked, add the roasted red peppers and stir to combine. Cook for an additional 5 minutes.

    Prepare the Honey Butter

    In a small bowl, mix together the remaining 2 tablespoons of butter and the honey until well combined.

    Finish with Pickled Red Onion and Scallions

    Remove the skillet from heat and stir in the pickled red onion. Drizzle the honey butter mixture over the hash and toss gently to coat. Finally, add chopped scallions.
